It’s time to look beyond pizza toppings, risottos and omelets.

Mushrooms can used in so many other ways.

And who better to guide the way for us than to ask some of the world’s most imaginative chefs?

As I write this, it’s still early days for this project. But over time we’ll be featuring interviews with chefs from as many different countries as we can.

Even with the interviews we’ve done so far, you’ll see an incredible variety of dishes, including an amazing range of mushrooms… some of which may be new to you.
