Mushrooms are versatile and delicious, making them a great ingredient for easy-to-make snacks and appetizers.

And be adventurous! You don’t need to confine yourself to using the common button mushroom every time. Try some different mushroom types.

An easy next step would be to try Shiitake mushrooms, which are available at many supermarkets now. Delicious and super-healthy too.

Garlic Butter Roasted Mushrooms

Fresh mushrooms (e.g., white button, cremini, or shiitake)
Butter
Minced garlic
Salt and pepper
Chopped parsley (optional)

Preheat the oven to 400°F (200°C). Clean and trim the mushrooms. In a small saucepan, melt butter and add minced garlic. Place the mushrooms on a baking sheet, drizzle the garlic butter over them, and season with salt and pepper. Roast for 15-20 minutes, or until tender. Garnish with chopped parsley before serving.

Mushroom Bruschetta

Fresh mushrooms, sliced
Olive oil
Minced garlic
Chopped fresh basil or parsley
Salt and pepper
Baguette or crusty bread, sliced

Sauté the mushrooms in olive oil with minced garlic until tender. Season with salt and pepper, and stir in fresh basil or parsley. Toast the bread slices and top with the mushroom mixture.

Stuffed Mushroom Caps

Large mushroom caps, cleaned and stems removed
Cream cheese
Grated Parmesan cheese
Minced garlic
Salt and pepper
Bread crumbs (optional)

Preheat the oven to 350°F (175°C). In a bowl, mix together cream cheese, Parmesan cheese, minced garlic, salt, and pepper. Stuff the mushroom caps with the cheese mixture, and sprinkle bread crumbs on top if desired. Place on a baking sheet and bake for 15-20 minutes or until the mushrooms are tender and the cheese is melted and bubbly.

Marinated Mushroom Skewers

Fresh mushrooms (e.g., white button, cremini, or shiitake)
Olive oil
Balsamic vinegar
Minced garlic
Salt and pepper
Wooden or metal skewers

Mix together olive oil, balsamic vinegar, minced garlic, salt, and pepper in a bowl. Thread the mushrooms onto skewers, and brush with the marinade. Let them marinate for at least 30 minutes. Grill or broil the skewers for a few minutes on each side until cooked through.

Mushroom and Cheese Quesadillas

Fresh mushrooms, sliced
Olive oil
Minced garlic
Salt and pepper
Flour tortillas
Shredded cheese (e.g., Monterey Jack, cheddar, or mozzarella)

Sauté the mushrooms in olive oil with minced garlic until tender, and season with salt and pepper. Place a tortilla in a heated pan, sprinkle cheese on half of the tortilla, and top with the cooked mushrooms. Fold the other half of the tortilla over the filling and cook until the cheese is melted and the tortilla is golden brown. Flip and cook the other side. Cut into wedges and serve.
